Slow cooked Beef Madras curry


Preheat oven to 180 degrees Celsius




1kg beef chuck steak diced

1 large brown onion sliced

4 sticks celery diced

2 Granny Smith apples peeled and diced

6 cloves garlic minced

2 tablespoons madras curry powder ( you can get spicy or non spicy versions of this depending on your taste. Or use regular curry powder )

5 tablespoons plain flour

6 beef oxo stock cubes

1/2 teaspoon or more of Sea salt


Heat up an oven safe pot on your stove to high, add the beef and brown well. Now add the onion and garlic and saute for a couple minutes. Add the celery, apple, flour, curry powder, beef stock cubes and salt. Stir well then cover with water so you have a slightly watery gravy as it will thicken as it cooks. Place a lid on or some Alfoil to cover then pop in the oven for 4 hours. It helps to check halfway through cooking time to see if the sauce is too thick or thin and give it a stir. If the gravy looks too thick just add a little more water, if it's too thin take the lid off and allow it to cook longer.

Once the beef is tender its ready.

Serve with toasted sourdough, rice or flatbread.
